We think there’s simply no better way to start the day than by fixing yourself a breakfast of fresh Irish smoked salmon served with creamy scrambled eggs. This breakfast of champions will keep you fuelled up, allow you to power through the day and because it’s packed with protein it’ll keep those hunger pangs at bay.
Here’s our favourite way to enjoy the exquisite combination of luxury smoked salmon and scrambled eggs – a simply, straightforward but ultimately delicious recipe compiled by our in-house Quinlan’s Chefs that will bring the unique taste of our smoked salmon right to the fore:
Ingredients (to serve 2):
- 4 large eggs
- 100 grams (3.5 oz) Quinlan’s smoked salmon or Kenmare smoked salmon, thinly sliced
- 2 tablespoons milk
- 1 tablespoon butter
- Salt and black pepper to taste
- 2 tablespoons of freshly chopped chives (entirely optional but they add a complimentary flavour to the smokiness of the salmon & creaminess of the eggs)
- Fresh wholemeal brown bread to serve – we prefer using this type of bread instead of a bagel or slice of white bread…the wholemeal/brown bread really adds to the natural flavours of the dish and is great toasted too.
Instructions:
- Get your eggs ready to roll:
- Break the 4 eggs into a bowl.
- Next, pour in the milk or cream.
- We like to season with a pinch of salt and pepper at this stage, some people prefer to do this at the end but seasoning now allows the salt and pepper to really integrate into the flavour of the eggs.
- Give the mixture a really good whisk with a kitchen whisk or just grab a fork and whisk until both the egg yolks and egg whites are fully combined and have a slightly frothy appearance.
- Get your eggs into a scramble:
- Heat the butter in a non-stick frying pan/skillet over medium-low heat.
- Pour in the egg mixture.
- Allow the eggs to set slightly, then gently stir the eggs to prevent them sticking.
- Continue to cook over medium-low heat but keep stirring the mixture occasionally, until the eggs are softly scrambled and just set. Try to avoid overcooking the eggs in order to keep the creamy texture for a more luxurious taste.
- Get your eggs to meet our Smoked Salmon:
- Just before the eggs are fully cooked, begin adding in the smoked salmon.
- Stir gently to combine the eggs with the salmon but to also heat the salmon through and bring it to the same temperature as the eggs.
- Serve it up:
- Remove the pan/skillet from the heat and if you’re like us and are a fan of them, sprinkle the freshly chopped chives over the top.
- Serve right away on your toasted wholemeal brown bread.
Our Chef’s Top Tips:
- For Extra Creaminess: Heighten the luxurious texture of this dish by adding a spoon of cream cheese or crème fraîche to the scrambled eggs & smoked salmon before serving.
- For Seasoning With Herbs: Bring some additional flavour by adding a sprinkling of freshly chopped herbs like some parsley or dill.
- For Pairing: Some roasted tomatoes go really well with this meal or we find that a side of avocado can really enhance this dish and make it even more substantial or a fresh salad served alongside can also make this a really well-rounded meal.
